What it is
Nutmeg is the dried seed kernel of Myristica fragrans, an evergreen tree in the family Myristicaceae.
In Hindi you know it as Jaiphal. You’ll find it as whole dried seed nuts or as ground powder.
Flavour and aroma
Warm, sweet and aromatic on the nose. The taste is fragrant and sweet-spicy with a nutty, woody depth and a hint of bitterness. It brings rich aromatic complexity to blends and confectionery.
Cooking with it
When to add it
Freshly grated Jaiphal goes on right at the end so the delicate aromatic oils stay intact. A quick dusting over the hot dish is enough.
Ground nutmeg is mixed into milk sweets, puddings and dessert syrups during preparation. It also goes into doughs and batters for baked goods and fried sweet flatbreads.
Use it for warm, aromatic depth in spice blends and confectionery.
